Our Dry-Aged Wing Rib of Sirloin is sirloin roast on the bone matured for a minimum of 42 days in-house to intensify the flavours and increase the meat’s tenderness. Roast it in the oven for less time than for your traditional rib of sirloin and settle in to enjoy.
As a general guide for serving amounts, we suggest around three-quarters of a pound of meat per person for bone-in roasts.
Supplied chilled and Vacuum Packed. Store at < 5oC. See pack for shelf life. Suitable for freezing. Freeze on day of purchase and use within 12 months.
Remove all packaging and allow to sit for 15 minutes to bring up to room temperature. Season well and sear on all sides in a medium hot frying pan. Place in a roasting tin, cover with tin foil and cook in a pre-heated oven at 180oC. Cook for 20 minutes per lb for Medium.
