Cooking Instructions
Remove all packaging and allow to sit for 15 minutes to bring up to room temperature. Season well and Sear all side in a medium hot frying pan. Place in a roasting tin and cover with tin foil and cook in a pre-heated oven at 180oC. Cook for 20 minutes per lb for Medium.

Beautifully lean with no fat hidden in the middle like in the supermarkets. Was actually a bit concerned whether there was enough basting fat but it turned out spot on. Best roast we’ve had in years.
