Our updated version of this classic Beef Wellington recipe is perfect for sharing with that special person on Valentines Day, but to be honest, it’s perfect for any occasion! We spread a generous portion of Scotch Beef Fillet in a seasoned mushroom duxelle and a layer of wilted Kale, then wrap it all in a crepe to protect the perfect puff pastry from any moisture leak, so that when it’s cooked you end up with a Wellington that will not only taste truly delicious but it will also look as good as anything served in any Michelin starred restaurant. We recommend brushing the pastry with whisked egg yolk only to give the pastry a deep and rich finish.
